l'invention concerne un procédé de production de ( r)-tétrahydrothiophén-3-ol comportant les étapes suivantes : (a) incubation de tétrahydrothiophén-3-ol en présence d'une préparation de souches appartenant au genre penicillium, genre aspergillus ou genre streptomyces ou leurs cellules cultivées, cette préparation permettant la conversion biologique de tétrahydrothiopén-3-one en ( r)-tétrahydrothiopén-3-ol, et (b) collecte de ( r)-tétrahydrothiophén-3-ol à partir de la solution d'incubation. l'invention concerne également un procédé de cristallisation de tétrahydrothiophén-3-ol optiquement actif de pureté optique améliorée. l'invention est caractérisée en ce que le tétrahydrothiophén-3-ol optiquement actif est cristallisé dans un solvant organique d'une température de 1 °c maximum.
