Az olajfaültetvények 400-600 méteres magaslati pontokon helyezkednek el közepes mélységű és rendkívül agyagos talajon (20-70%-os karbonáttartalom). A Hojiblanca változat számára rendkívül megfelelő az agyagos talaj, mivel ez a változat a talajból magas kalciumkivonó képességgel rendelkezik. Ugyanakkor az Antequerai medence víznyelő jellege miatt – ami több szinten is folyami területeket hozott létre – a talaj nagy mennyiségű, a földtörténeti harmadkorból származó üledéket, így középpliocénkori vörösagyagot tartalmaz, ezért az olívák magas káliumtartalommal és jelentős nedvességtároló képességgel rendelkeznek, ami állapotuknak kedvező, mivel ennek köszönhetően a termesztésükre szánt területek 90%-át nem öntözik.

The olives are grown between 450 and 600 metres above sea level, on medium-depth very limy soil (20-70% carbonate of lime). Hojiblanca is very well adapted to this type of limy soil, since olive trees require large amounts of calcium from the soil. What is more, because the surrounding area drains into the Antequera Depression, various different levels of river terrace have developed, all bearing large quantities of tertiary deposits, including Middle Pliocene red clay, which provide the olive trees with plentiful amounts of potassium and have high levels of moisture retention, promoting vegetation in the olive trees, which is useful given that more than 90% of the plantation land is not irrigated.
