Die Herstellung von "Hořické trubičky" im eingegrenzten Gebiet wurde erstmals 1812 erwähnt, als man in der Familie von Frau Líčková begann, anlässlich von Familienfesten, aber auch zum Verschenken, süße Waffelröllchen zu backen. Das Familienrezept wurde nach Einheirat des Konditors Karel Kofránek perfektioniert. 1898 meldete er seine Erfindung, ein elektrisches Waffeleisen, zum Patent an. Zu dieser Zeit wurden "Hořické trubičky" bereits gewerbsmäßig hergestellt und bis nach Deutschland, England, die Türkei, Amerika und Shanghai exportiert. Außerdem wurden sie auf Messen im In-und Ausland mehrfach ausgezeichnet. Nach der Verstaatlichung im Jahre 1949 wurden die Waffelröllchen bis 1962 in der Firma Fejt und danach in verschiedenen Staatsbetrieben hergestellt. Nach Wiedereinführung der Marktwirtschaft knüpften die Mitglieder der Vereinigung der Hersteller von Höritzer Waffelhörnchen ("Sdružení výrobců Hořických trubiček") wieder an die Tradition im eingegrenzten Gebiet an. Zwar musste die Produktion modernisiert werden, aber die Herstellung erfolgt weiterhin nach traditionellem Rezept und Verfahren.

The first historical mentions of the manufacturing of rolled wafers within the designated geographical area of Hořice date back to 1812, when in the family of Mrs Líčková, little sugary rolls began to be produced for family celebrations and for giving as presents. It was confectioner Karel Kofránek who perfected the family production method after marrying into the family. In 1898, a patent was filed for his invention — an electric wafer-maker. By this time, Hořice rolled wafers were already being commercially manufactured and even exported to Germany, England, France, Turkey, America and Shanghai. They also received a series of awards and distinctions at trade fairs both at home and abroad. From nationalisation in 1949 until 1962, the wafers were manufactured by the Fejt factory, and thereafter under the name of a number of state enterprises. Following the return to the market economy, the members of the association of Hořice rolled wafer manufacturers ("Sdružení výrobců Hořických trubiček") decided to renew their links with the traditional production method in the designated geographical area. Although modernisation of the production method was necessary, the recipe and the traditional production techniques are still followed.

Zusammenhang mit dem geografischen Gebiet:Die Hersteller, die dieser Vereinigung angehören, beziehen ihr Know-how nachweislich aus historischen Quellen. Sie verarbeiten die Rohwaren nach traditionellen Höritzer Rezepten. Die Tradition konnte sich erhalten, weil das Wissen von ehemaligen Mitarbeitern und ortsansässigen Familien in die neuen Unternehmen eingebracht wurde.

Ihre Einzigartigkeit verdanken die Höritzer Waffenröllchen neben den traditionellen Rezepten auch besonderen Eigenschaften des verwendeten Mehls (glutenarm) und des örtlichen Wassers (schwacher Mineralgehalt, weich, gewonnen aus 100 m Tiefe). Diese Merkmale verleihen den Waffeln ihre spezielle Beschaffenheit: Sie sind besonders zart, porös und knusprig, lassen sich aber zu den Röllchen formen, die die Grundlage des Produkts bilden.

Aside from the traditional recipe, the distinctive character of the Hořice rolled wafers depends also on the specific properties of the flour (low in gluten) and the local water (low mineral content, soft, and tapped at a depth of 100 metres) that are used. These particularities help to give the wafers their specific character: exceptionally soft, porous, crunchy and flaky, although the latter characteristic does not prevent them from being rolled into shape.
