The thermal gap which occurs only during maturation has a positive influence on the synthesis of anthocyanins.

Another factor is altitude. Apple trees grow best at an altitude of between 300 and 500 metres and there is a precise correlation between the taste of an apple and the altitude at which it is grown, altitude mitigating the higher temperatures that often inhibit the development of aromatic substances and anthocyanins. "Golden delicious" grown at altitude has an elongated shape and is firmer, with a higher sugar content.

A esses elementos acresce o fenómeno da altitude: entre 300 e 500 metros a adaptação das macieiras é ideal. Existe, com efeito, uma relação precisa entre as qualidades gustativas de uma maçã e a altitude, factor que modera as temperaturas mais elevadas, frequentemente causadoras de uma inibição do desenvolvimento das substâncias aromáticas e das antocianinas. A "Golden delicious" apresenta, em altitude, uma forma alongada, caracterizando-se por uma firmeza mais acentuada e por um teor superior de açúcares.

Natural factors: Olive trees in La Rioja are normally to be found on dry soils with little humus in their upper layers, rich in lime, clay and sand and with no impermeable layers, so having good drainage, limiting growth, particularly in the hot season, and so a correct hormonal balance which affects the future quality of the olives produced here by increasing the content of the fruit in oil, polyphenols, anthocyanins and aromas and lowering pH, malic acid, potassium and grassy flavours. A more fertile type of soil would result in excessive growth and, worse, growth spilling over into the period when the olives are ripening, so delaying ripening and preventing adequate maturing. There would also be more shade problems because of the greater density of foliage and abundance of vegetation and more fungal diseases resulting in lower quality.

Factores naturais: Os olivais de La Rioja localizam-se principalmente em solos pardos, pobres em húmus nas suas camadas superiores, ricos em calcário, argila, limo e areia e sem camadas impermeáveis, o que assegura uma drenagem favorável, um crescimento limitado, especialmente na fase da maturação e, em consequência, um equilíbrio hormonal correcto, que influi na qualidade dos azeites aqui produzidos, ao provocar no fruto um aumento do teor de azeite, polifenóis, antocianos e aromas e uma descida do pH, do ácido málico, do potássio e do carácter herbáceo. Outro tipo de solo, mais fértil, provocaria um crescimento excessivo e (ainda pior) prolongado, inclusive no período de maturação da azeitona, que se atrasaria e não seria adequada. Haveria, além disso, mais problemas de ensombramento, devido à maior densidade foliar e frondosidade da vegetação, e mais doenças criptogâmicas, que se repercutiriam numa redução da qualidade.

The area enjoys a humid, ocean climate, with fairly abundant, although not excessive, rainfall and temperatures that do not reach extremes. The average temperature of more than 9oC defines the physiological limit of the crop and can be directly linked to the day/night temperature variation, which is a decisive factor in September and October. The alternance of cold nights and hot, sunny days promotes the development of aromatic substances and anthocyanins, which give the skin its pink pigmentation.

O clima é de tipo oceânico húmido, com precipitações bastante abundantes mas não excessivas e temperaturas sem extremos. A temperatura média, superior a 9.°C, define o limite fisiológico da cultura da macieira e pode ser directamente correlacionada com o factor de amplitude térmica dia/noite, que é determinante durante os meses de Setembro e Outubro. A alternância de noites frias e de dias quentes e ensolarados favorece o desenvolvimento das substâncias aromáticas, bem como a pigmentação rosada da casca devida às antocianinas.
