rye is a cereal highly tolerant of soil acidity and more tolerant of dry and cool conditions which can replace wheat in lots of food preparations. although its composition is very similar enough to that of tarwe, rye nevertheless contains much less gluten, which is interesting for people with a quantitative intolerance to gluten. as a whole grain rye is a rich source of several nutrients beneficial to health, contains iron, folic acid and fluorine and its high fibre content promotes regular intestinal transit.
roggen ist im geschmack kräftig und herzhaft und ist neben weizen das wohl wichtigste brotgetreide. obwohl seine zusammensetzung jene des weizens sehr ähnlich ist enthält roggen jedoch viel weniger gluten und bietet also bei quantitativer glutenintoleranz eine interessante alternativ zum weizen. als vollkorn ist er reich an für die gesundheit nützliche nährstoffe, enthält eisen, folsäure und fluor und sein hohes gehalt an fasern fördert einen besseren darmtransit.
