 my gougeres rose nicely but they didn"t brown evenly and, when i removed them from the oven, the ones in the middle of the pan fell.  they still tasted good and they were light and moist but they didn"t look good.can you tell me what did i do wrong and how can i correct it?  was my oven too hot?  not hot enough?  i used 425°f and a silpat mat instead of parchment.
