4 settembre - qui oggi piove ed è piovuto anche ieri; dopo tutto questo caldo che ha fatto nelle ultime due settimane, un pò di acqua serve a molto, soprattutto per portare ad una buona maturazione l'uva nebbiolo che incominciava ad accusare un pò di stress idrico. bene, il dolcetto lo abbiamo vendemmiato martedì e mercoledì scorso (raccogliendo solo al mattino e incominciado all'alba, questo per evitare di portare in cantina l'uva con un grado di temperatura troppo elevato) e oggi ho incominciato a svinare la prima vasca.in verità, prima di iniziare la vendemmia, ero un pò preoccupato per il dolcetto, avevo infatti il timore che il caldo avesse condizionato in modo negativo la fase di maturazione (l'uva dolcetto è molto delicata e quindi molto sensibile a stress termici) invece tutto è andato per il meglio, il grado zuccherino, l'acidità ed il colore sono ottimi ed il vino, per ora, mi fa supporre che, probabilmente, si potranno bere dei buoni bicchieri di dolcetto del 2011. l'unico inconveniente è la quantità, infatti ho avuto una resa inferiore al 15-20 %, ma questo me lo aspettavo.
