alkali-sulfietkaramel wordt bereid door gecontroleerde hittebehandeling van koolhydraten (in de handel verkrijgbare extensieve zoetstoffen van levensmiddelenkwaliteit bestaande uit de monomeren glucose en fructose en/of polymeren daarvan, bijvoorbeeld glucosestroop, sacharose, invertstroop en dextrose) met of zonder zuur of base en in aanwezigheid van sulfietverbindingen (zwaveligzuur, kaliumsulfiet, kaliumwaterstofsulfiet, natriumsulfiet en natriumwaterstofsulfiet); er mogen geen ammoniumverbindingen worden gebruikt.
