fish is well recognized as a healthy food as it is high in polyunsaturated fatty acids, including omega-3 fatty acids. fish is also a high-protein and low-fat food that provides good nutrition values and health benefits. development of convenient fish products is one way to increase its consumption and most of these products often entails the use of fish mince which is low in minerals, especially calcium. the frankfurter type sausage, made from beef, pork, chicken, meat or fish mixtures, with the addition of different ingredients and flavourings, including extenders or binders. fish sausages are better than beef and chicken sausages because they have a high nutritional value but less like because of poor texture. in making of fish sausage there have suitable type of fish use that can be use which is white-fleshed fish that contain lower in fat than any other source of animal meat. the fishes that contain white-fleshed are horse mackerel, grass carp, red tilapia, cod fish, treadfin bream and catfish. fish sausage is one of the products from fish mince which can easily be consumed as a snack. fish sausage can be produced using a mixture of multiple species of fish, but such products are not generally well-received by customers due to their fishy flavor and soft texture. the aim of this study to review more about the quality of sausage produced by using different type of fish.
